Lou Perez started his culinary career in the 80’s with the very progressive Chart House Restaurant Group in Southern California.

Lou then moved to Maui in 1987 to work as a surf and windsurf photographer. Deciding to stay, he went back to a more stable career in the restaurant business. ‘I was fortunate to get employed by the Hali’iMaile Restaurant Group, which is led by chef Beverly Gannon and husband Joe Gannon’ say Lou. He then got on the ground floor of Joe’s Bar and Grill in Wailea. It become one of the best restaurants in the Islands! ‘Joe and Beverly are not only friends, they are great mentors’.

The next chapter started when he and his wife Marlene moved to Portland, OR. Lou says ‘I am very proud to be chosen for a position at El Gaucho. I had many great years there along with all the amazing people I met’.

Lou then moved out to the country and became the clubhouse manager and assistant food and beverage manager at the prestigious Pumpkin Ridge Golf Club in North Plains, OR. After his time at Pumpkin Ridge, Lou moved back to downtown Portland and had the privilege to manage The London Grill at The Benson Hotel before they closed the iconic restaurant.

After nearly a forty year career, he has started a new adventure with The Opihi Group. As partner, Lou is excited to be operating The Steakhouse, Lou’s Bar and The Chamber.
